A critical review of hygiene and food safety standards amongst mobile vendors and street food traders

Street food traders and mobile vendors at festivals and fairs can provide a major source of food to high volumes of people. However, sometimes these can also be associated with foodborne illness. When outbreaks occur at these events, finding a source can be very difficult. Therefore, it is essential for mobile vendors and street food traders to be trained and educated in regards to hygiene and food safety. This critical review was undertaken to gain a better understanding of hygiene and food safety standards amongst mobile vendors and street food traders. Due to the nature of these premises, the lack of guidance available and increased amount of flexibility with enforcement, the results are expected to be varied in regards to standards of hygiene and food safety. There are many credible research papers available to analyse which will be reviewed within this paper and thus, recommendations will be made as to whether improvements in hygiene and food safety are required.
